Exercise: 7km Run – MMCT (Trigons)

Brrrr, it was a bit chilly this morning.

Did you count it……that’s 4 days of running in a row now 😀

Thoroughly enjoyed the run, especially as I hadn’t caught up with Michelle for a while, so we put the world to rights, which made the run go pretty quickly!

Just a tight right calf and a little niggle in my right knee, so I can’t complain.

Here’s another easy meal. Last night I made Chicken and Prawn Paella.

You’ll need

4 chicken thighs
Green prawns (I bought 250gm)
1 Chorizo (mine was spanish)
4 Green Shallots
1 Red Capsicum
1 400g Can Diced Tomatoes
Saffron
2 Bags Microwave Basmati Rice
1/2 teaspoon paprika (or however much you like to taste)

Cook the prawns until just cooked. Put on a plate. Cook sliced up Chorizo. Add to plate. Cooked diced chicken thighs. Add to plate. Cook cut up capsicum. Add shallots and cook.

Cook rice in Microwave.

Chuck prawns, chicken and Chorizo back in pan with shallots and Capsicum. Add tinned tomatoes, rice, paprika and a dash of saffron to colour it. Mix it all up and cook for a few minutes to thicken.

Serve immediately!!
